Title: Marvelous Mashed Potatoes

Yield: 6 Servings

3 1/2lbWhite potatoes peeled and quartered
1cNon-fat sour cream
1cSkim milk
  Salt and pepper to taste
VARIATIONS (OPTIONAL
5 Garlic cloves roasted, peeled
1tbPrepared horseradish
1/4cChopped green onions
1cn(4.5oz) mild green chilies peeled and chopped drained

Boil the potatoes in water until tender. Drain. Add sour cream, milk, salt and pepper. Beat to desired consistency. Add more sour cream and milk as needed.

Serves 6 to 8.

Per cup: 201 calories, 5.3g protein, 44g carbohydrates, 3g fiber, 0.3 g fat, 65g sodium.

Variations: While beating, add one of the listed seasonings (increase as desired).
